tomato meatballs

Ingredients
  • 1/2 kg ground beef
  • 1/2 cup onion, finely chopped
  • 2 tablespoons parsley finely cut
  • 3 tablespoons ground coriander
  • 1/2 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1 cup fine dry bread crumbs
  • salt
  • pepper
  • 1 kg diced tomatoes
  • 1 tablespoon tomato paste (for the intense colour)
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon sugar
  • salt and pepper to taste
  • extra virgin olive oil
Instructions
  1. Mix all the ingredients in a large ball and form medium meatballs.
  2. Prepare the tomato sauce: heat in a medium saucepan, the olive oil and sauté onions and garlic for 2-3 minutes over medium heat. Add tomatoes, salt, pepper and sugar. Add the fresh basil and let it come to a boil and then lower the heat and boil for 10 minutes, add the oregano.
  3. Cook on lower heat for 35-45 minutes.
  4. Place the meatballs to boil inside the tomato sauce and cook for 15 more minutes.
