Kimolos is an little cycladic island next to Milos. Ladenia is a kind of pita with very limited ingredients. It is ideal for vegetarian and vegans because does not contain dairy or any other animal produced ingredients.

500 gr all purspose flour
1/2 cup warm water
1 tsp sugar
10 gr dry yeast
1/2 cup olive oil
fleur de sel
fresh or dry thyme or oregano
onions and tomatoes cut to rounds

1. Dissolve the yeast and the sugar in the water. In a large bowl, add the flour and make a well in the middle. Inside the well pour 1/4 cup of olive oil and the water and yeast mix. Knead to incorporate flour and water, add the salt. The dough should be smooth and elastic. Form a ball and leave the dough to double in size inside the bowl ( be sure that you cover it w

ith a clean tea towel) for approximately 35-40 minutes. Meanwhile, chop the tomatoes and the onions.
2. When the dough has risen place it in a non stick pan. Place the onions and tomatoes over the dough and sprinkle
with the oregano/thyme and fleur de sel. Pour the rest of the olive oil over the ladenia pie and bake it in a preheated oven for 40 minutes until the dough becomes golden brown in the edges.
3. Enjoy the ladenia pie hot from the oven or even the next day as a snack.
