This is an example of how wonderful are all vegetables and herbs in the middle of spring season! This is a raw salad with courgette and typical greek herbs that are at their best this time of the year. the courgettes are marinated in fresh lemon juice  and extra virgin olive oil and with parsley, mint and fennel are the perfect combination with some sour feta cheese! You can use whatever herbs you want but I think that the combination I am proposing is the best!
6-7  baby courgettes, organic
50 ml fresh lemon juice
1 tsp lemon zest  και ξύσμα
1 spring onion, finelly chopped
1 tbsp fresh mint , finelly chopped
1 tbsp parsley finelly chopped
1 tbsp fennel finelly chopped
extra virgin olive oil
some sour fresh cheese or feta to sprinkle on top of the salad
sea salt
freshly ground pepper
1. Cut the courgettes in fine round slices and place them in a large plate.
2. Sprinkle them with all the finelly chopped herbs, spring onions, lemon zest, lemon juice and the extra virgin olive oil.
3. Cover the plate with cling film and put them in the frigde for 15-20 minutes.
4. Crumble some sour or feta cheese on top of the courgettes and serve cold with a glass of wine!
If you are vegan, omit the cheese or add some vegan sour cashew cheese instead!
