This beetroot salad is the ideal appetizer if you like greek yoghurt and beetroots. It is the recipe you need to impress your friends in a sunday’s BBQ. You can use already boiled beetroots, that are available in the market. If you like a smoother yoghurt flavour you can add one or two tablespoons of mayonnaise.

4 large boiled beetroot
1 large greek yoghurt
4 cloves of garlic (to taste)
3 tablespoons of red wine vinegar

1.Slice the beetroots to small cubes of about 1 cm each and mix them with yoghurt.
2.Add garlic, salt, olive oil, vinegar and stir well.
3. Let it rest in the frigde for 1 hour. Serve it cold !
