Zucchinis are one of the most popular summer vegetable in Greece! You can have it raw or marinated, boiled with extra virgin olive and fresh lemon juice, stuffed with rice or mince meat, deep fried or you can eat as a kefte, a delicious fritter full of fresh herbs and all the summer goodness! Follow the recipe for the most amazing zucchini fritters you will ever have, easily by using only 4 ingredients!

4-5 zucchinis (300-400 gr), coarsely grated

2 tbsp self raising flour

1 medium onion, diced

2 tbsps fresh mint, finelly chopped ( or 1 tsp dry mint)



  • In a large bowl grate the zucchinis and add the rest of the ingredients, and whisk them well.
  • Heat some olive oil in a non-stick pan and add 5-6 dolops of the zucchini mixture in the pan.
  • Fry the fritters fro 1 minute from each side, until golden brown and ransfer them to a large plate lined with kitchen paper to avoid any excessive oil.
  • Serve the fritters warm with some tzatziki or plain yoghurt with some fresh mint!
