A slice of chilled watermelon with some feta is the ultimate summer memory for many of us, in Greece! This watermelon and feta cheese salad is a tasty alternative to the greek salad, where watermelon takes the place of the juicy tomato! Drizzle the salad with a small amount of extra virgin olive oil for exceptional taste and some fleur de sel, handpicked salt and you will get the best summer lunch!

Ingredients
  • 400 gr watermelon, cut in cubes
  • 200 gr feta cheese, cut in small pieces or crumbled
  • 40 gr fresh mint leaves
  • 1 smal onion, thinly sliced (optional)
  • 6-7 Kalamata olives (pitted)
  • 2-3 teaspoon white baslamic vinegar
  • extra virgin olive oil to serve
Instructions
  1. In a large bowl mix all the ingredients except for the olive oil.
  2. Stir them carefully and set the bowl in the frigde until serving time.
  3. When you are ready to serve drizzle over some olive oil and serve with some sourdough bread!
