These zucchini pancakes are a lighter alternative to the traditional zucchini fritters, one of the most famous greek appetizers. Below you will find the eggless, vegan version of this tasty greek specialty!

3 medium zucchinis finely grated

1 medium onion grated

1 tbsp fresh spearmint

1 garlic clove grated

30ml tepid water

2 tbsp corn starch

salt and pepper

3-4 tbsps olive oil

 

1. Mix all the ingredients in a medium bowl and combine them well with a large fork.

2. Heat some olive oil in a large pan and spoon some of the mixture and place it in the pan.

3. Cook the fritters 2-3 minutes, in medium heat, from the one side and then flip them over. Use a spatula to flatten each fritter slighlty.

If you are vegan serve immediately with some lemon wedges otherwise you can accompany those fritters with some plain greek yoghurt or some tzatziki.
