Almost 10 years ago I went to Spain and tried for the first time this super refreshing gazpacho soup. It served always cold during the hot summer days in Southern Spain and if I am not wrong it is a Andalusian specialty. It is actually a great and tasty combination of raw summer vegetables, tomatoes, cucumber, green and red pepper , all processed to create this super refreshing soup.
1/2 kg ripe tomatoes
1/2 cucumber
1/2 green pepper
1/2 green pepper
1/2 red pepper
2 medium slices of stale bread
1/2 garlic cloves
3-4 ice cubes
extra virgin olive oil to drizzle
salt1. Put the tomatoes and the rest of the ingredients in a food processor and mix them to create a thick mixture. Then serve chilled with some fresh basil leaves and drizzle some extra virgin olive oil on top.

Thsi is oen of teh cold soups I have regularly in summer when my tomatoes are ripe in the garden.Delicous;)
