This is a very simple recipe my grand mother used to cook during the summer. It is the best thing to eat after being at the beach all day and the best cured for hangover! The following recipe is the original one from the area of Peloponnese.
You can find a lot of similar recipes with different names, in various areas of Greece, with more ingredients added to the basic recipe. In Corfu and the rest of the Ionian Islands is called strapatsada, deriving for the italian word strapazzare which means to scramble.
Do not be tempted to add oregano or other fresh herbs or you will miss the essence of this particular dish!
- 8 eggs
- 1 kg fresh tomatoes, diced
- 1 teaspoon sugar
- 1/4 cup olive oil
- Put the diced tomatoes in a saucepan in medium heat to tender.
- Add the olive oil, salt, pepper and sugar and stir well.
- Beat together the eggs and add to the frying pan and cook well without letting ingredients get too dry.
You can serve it hot or cold, with bread and feta!!!
